Parmesan cheese: a little (grated)

Parsley: a little (chopped)

Egyptian rice: a cup and a half

Chicken broth: 3 cups

Vegetable oil: two tablespoons

Onion: 1 piece (medium size / finely chopped)

Garlic: clove (chopped)

Mushrooms: 1 cup (mushrooms, canned, washed and sliced lengthwise)

Salt: a quarter of a teaspoon

Black pepper: a quarter of a teaspoon

Butter: a quarter cup


1. Wash the rice, soak it in water for an hour, then filter.

2. Heat chicken soup in a pot, over low heat. Note that in the absence of soup, you can boil three cups of pure water, and add a cube of chicken soup to it.

3. While the soup is boiling, add the oil to the pot, and stir the onions in it, over medium heat, for three minutes. When you notice that the color of the onion has turned light golden, add garlic while stirring for a minute, then "mushrooms" while stirring for three minutes until the color of the latter turns brown.

4. After boiling the soup, add the rice to the mushroom pot while stirring for two minutes. Gradually pour the soup with the rice, that is, pour a spoonful, while stirring, until the rice absorbs the soup, then a second spoonful, while stirring... and so on until the soup is finished. Note that the process will take 15-20 minutes.

5. Sprinkle salt and pepper, and add butter while mixing for the last time. Serve the risotto hot, garnished with parmesan cheese and a little chopped parsley (optional).
