1- Heat the oil on medium heat in a wide pan. If you place your palm 3 inches above the surface of the oil, you should feel the heat.


2- Fry the onions in groups. Fry until it gets a light golden brown. and set aside.

1- Mix chicken with all the marinade ingredients and half a fried onion.

2- Tip: add yogurt, start with ½ cup and increase as needed to ½ cup. The mixture should be thick, not runny.

3- Grind the biryani spices in a spice grinder. Add to the chicken marinade and mix. Soak for 3 to 5 hours.

1- Wash the rice 4 to 5 times in plenty of water until it becomes transparent. Soak half a cup of basmati rice in water for an hour. keep the rest.

2- Bring two and a half cups of water to a boil in a rice cooker. Add ½ teaspoon of salt, 1½ tablespoons of olive oil and whole spices (see note). Then add 1⅔ cup of basmati rice and mix. Let it simmer until the water is completely absorbed (see notes).

6- Sprinkle the cilantro, mint, half of the lemon juice and half a tablespoon of olive oil over the chicken/marinade. Then sprinkle most of the fried onions.

7- Drain the soaked basmati rice well and spread it on the fried onion layer. (This raw, spongy rice will cook with chicken juices.)

8- Then, put a layer of cooked rice. Top with the remaining lemon juice, saffron water, fried onions and ghee.

9- Tip: If you prefer, you can choose whole spices from the cooked rice before it is steamed.

The ultimate biryani recipe

1- Place a sheet of parchment paper, followed by a sheet or two of aluminum foil, over the cooking pot. Put the lid on tightly. Bake the biryani in an oven preheated to 175 degrees for an hour, until the steam accumulates well.

2- Alternatively, you can cook on a stove in a thick cooking pot. Heat the biryani over medium heat for 10 to 15 minutes then reduce to low and cook for 1 hour until the steam builds up well.

3- Let it cool for five minutes and gently mix the rice and chicken. Using a biryani spoon in a serving dish, make sure to serve the rice in different colors - white, yellow, orange and brown. Put some pieces of chicken on top. Sprinkle brown onions and chopped herbs and add saffron rice on top.

4- Serve chicken biryani with tomato egg curry or raita prepared with creamy yogurt, chopped red onion, jalapeno and coriander.
